Serves: 3

Cooking time: 15-20 minutes

Ingredients:

1 1/2 lbs potatoes, peeled, washed and dried, and cut into 1 inch pieces
1 1/2 oz clarified butter + a little more
1 teaspoon turmeric
1 large bay leaf
1/2 teaspoon salt
1/2 teaspoon onion salt
1/2 teaspoon chilli powder
2-3 teaspoons garam masala
1/2 teaspoon ground black pepper

Method:

  1. Heat the 1 1/2 oz butter in a large frying pan, and put in the potatoes with the turmeric and bay leaf.
  2. Stir and fry over a medium heat for 5 minutes.
  3. Season with salt, onion salt and chilli powder. Fry again for another 5 minutes and dust with the garam masala. Add a little more butter and stir.
  4. Cover the potatoes and leave for a few minutes over a very low heat. Shake the frying pan three or four times during this period. The potatoes should now be done.
  5. Uncover and let them crisp until the garam masala has formed a crusty coating. Add freshly ground black pepper and serve.
