Retro Recipe Ambrosia Salad

Retro - Ambrosia Salad

1 (12 oz.) NON-DAIRY whipped topping (NOT DAIRY WHIPPED CREAM)
1 (8 oz.) pineapple - chunks or crushed - drained
1 (11 oz.) mandarin oranges - drained
1 (7 oz.) flaked coconut-sweetened
1 (5 oz. Or 1/2 a 10 oz. bag) mini marshmallows
1 (10 oz.) maraschino cherries WITHOUT stems - drained

Add all ingredients to a bowl and mix well.
Allow to sit for several hours.

Not sure why dairy cream couldn't be used, but maybe its of its era and non-dairy was the thing! I was expecting a super sweet dessert, but in fact there is a good balance of citrus and sweet here.

I still can't get my head round why these type of dishes were (are?) called 'salad'. Would they be served alongside savoury dishes?

The enzyme in pineapples break down dairy and proteins. That enzyme is what is in some meat tenderizers also.
