A savoury version of cinnamon buns using The Lady’s Relish and a butter enriched dough. This recipe makes 8 large or 16 small buns.

- 450g bread flour
- 7g instant yeast
- 8g salt
- 1 tbsp sugar
- 200ml semi-skimmed milk
- 50g butter
- 1 egg
- 'The Lady’s Relish' as per the recipe here
- Beaten egg to glaze
- Poppy seeds to scatter on top
- Place the flour and sugar in a large bowl. Add the instant yeast to one side of the bowl and salt to the other.
- Pour the milk into a large microwaveable jug and add the butter.
- Heat in the microwave until the butter melts. Stir.
- Beat the egg and add to the milk/butter milk, mixing well. The milk/butter/egg mix should now be just lukewarm.
- Add them milk mixture to the flour (you may not need it all) and mix together to form a soft dough.
- Knead for a 5 minutes on a lightly floured surface.
- Leave in a covered bowl to rise until doubled.
- Roll out the dough into rectangle approx. 35 x 25cm.
- Spread the relish over the surface of the dough
- Starting from one of the long edges, roll the dough up like a swiss roll and cut into 8 or 16 slices.
- Arrange these in a tin (or tins), evenly spaced out but fairly close together.
- Cover, and leave to prove for about 30 minutes
- Brush the tops with beaten egg and sprinkle with poppy seeds.
- Heat the oven to 200C Bake for 25 minutes or until golden brown.
