Recipe Anda Dar-Behest (Aromatic Souffle Omelette)

Serves: 2-3
Prep time: 2-3 minutes
Cooking time: 10 minutes

Ingredients:

6 large eggs
1/2 teaspoon turmeric
3 tablespoons onion juice
1 tablespoon minced parsley
1/2 teaspoon minced green chilli
1/2 teaspoon salt
1/2 oz butter

Method:

  1. Separate the eggs. Beat the yolks until smooth, and stir in onion juice, parsley, turmeric and chilli, and season with salt.
  2. Whip the egg whites until very stiff. Carefully fold into the egg yolk mixture.
  3. Butter a large pan or round baking dish liberally, and spoon in the egg mixture.
  4. Place the pan in a pre-heated medium oven and wait until the omelette rises and is firm but fluffy.
  5. Serve immediately.
My notes:

  1. I used 1/2 teaspoon of Gondal hot chilli powder instead of the minced green chilli, and very finely minced onion instead of the onion juice
  2. I pan fried it, carefully turning it over when the base had lightly browned, and lowering the heat slightly until set. Not so fluffy but equally delicious.
