Any baking recipes that call for watermelon?

Someone in another community I belong to was talking about how watermelon has such great health benefits, and they're totally right! They were talking about how it is important to still eat it during the colder months. I've never heard of a way to incorporate watermelon into hot meals or baking, so I was wondering if anyone knew any recipes? Would watermelon represented in a hot dish just not taste right? I would love to eat it during the winter without feeling cold.
 
I can't imagine watermelon cooked in any way, surely it would just dissolve, as it's mostly water.

I guess you might be able to incorporate it into a warm salad, at best...
 
I love the taste of watermelon and it is such a low calorie food consider the health benefits. However, I don't think I've ever had a baked good with watermelon. I know people make raw cakes using watermelon: http://www.paleocupboard.com/watermelon-cake.html.

It's pretty tasty, sort of sweet and sour, and quite easy. Googling shows that you can make all sort of variations, though, and some look much sweeter than I remember.

My mother used to make it all the time when I was little, I haven't made it as an adult but this recipe looks close to what we did;

I have somewhere out there a watermelon soup recipe. I have always tried to cook this but for one reason or another I have not managed to get it prepared yet.

Sometimes is because I don't have all the ingredients, some others because I don't find the recipe. This is a newspaper clip from 1999, and I was postponing its inclusion into my recipe book until try it, but last time when I found the clip in a drawer, I realized my sight is not that sharp and could not read it.

Will try to find this recipe to post it, perhaps any of you may try it before I can.

ooh, thanks, I might try that.

NT's parents often serve it as dessert, and while I like a little bit, I find it a bit dull after a while (I think it's a fruit better suited to eating in tropical climes, where the refreshment is really welcome). Maybe I'll pinch the peel instead!

Definitely. Watermelon juice is one of the most refreshing things I've ever had, so good.

But for the blandness, try a pinch of salt on fresh watermelon, it brings out the sweetness :)
