Recipe Apple and onion shortcake

So the challenge to make a sweet dish from onions got me thinking. First I was going to make an apple and onion bread pudding as bread puddings can be sweet or savoury, but I wanted to be more creative. My mum used to make strawberry shortcake so I thought I would try this:

Shortbread:
  • 2oz butter
  • 1oz sugar
  • 3oz flour
Mix together until it forms one lump
Rest in fridge for half an hour
Roll out and cut six circles
Cook on 190 for 20 mins

Caramelised Apple:
  • 1 apple
  • 1 dessert spoon butter
Melt butter in frying pan on low heat
Cup apple into slices
Cook apples slowly turning over just once (approx ten minutes)

Caramelised onion:
  • 1 small brown onion
  • 1 dessert spoon butter (then more!)
  • 1 dessert spoon muscovado sugar (then more!)
Melt butter in frying pan on low heat
Add finely sliced onions
Add brown sugar
Heat slowly adding more butter and some water when it gets a bit dry
Cook until lovely and soft
Add more sugar to taste

Layer the shortbread, apple, whipped cream and onion.

Layers were:
  • shortbread
  • onion
  • cream
  • shortbread
  • apple
  • cream
  • shortbread
  • little cream and a slice of apple

Its an intriguing recipe - I'm trying to picture it. When you say layer the shortbread, apple, cream and onion, does that mean in a glass? One layer of each? I suppose it needs a photo really!
