Ingredients:
- 1 head of cauliflower
- 1 cup yogurt
- 1 tbsp all purpose flour
- 2 eggs
- ¼ cup vegetable oil
- 1 tbsp butter
- 1 tsp paprika powder
- ¼ tsp grated nutmeg
- 1 cup shredded mozzarella
- Salt to taste
Instructions:
- Cut the cauliflowers into small florets and cook in salted boiling water until tender
- Drain well and set aside the florets
- In a bowl, whisk the eggs and add the yogurt, flour, oil
- Add the paprika powder, grated nutmeg and salt to taste, mix well until combined
- Dip the cauliflowers in the mixture and layer into an oven dish
- Pour the remaining mixture into the dish
- Pre heat the oven to 200°C / 390°F
- Cut the butter into smaller pieces and place on top
- Bake the cauliflowers in the oven for 20 minutes until golden on top
- Remove from the oven and cover the dish with shredded mozzarella
- Bake for another 5 mins until the cheese is melted and golden brown
