Beef Suet

I recently bought 1 kg of frozen beef suet and it's all in one lump.

Would it be acceptable to defrost it (or partially defrost it) and thereafter divide it into usable portions for refreezing?

My use of beef suet is limited to dumplings (in beef stew) and seasoned bread pudding. Unless someone has any other suggestions.

Not sure if it would be a good idea. Could you not simply cut it into portions with a serrated saw type knife ? Might be safer.

I don't have a "freezer knife" but I may be able to borrow one.
 
Suet generally keeps very well.

I remember my ex UK wife made some dumplings from some Atora that had been in the cupboard for 3 years. It was well past it's "use by date".
 
I've now got around to cutting it up and refreezing it in 100 gm portions. Beef stew and dumplings next week now that the winter temperatures are upon us. 20 degC this morning at 06:00!
