Recipe Bourbon Cheesecake - the recipe!

Mod.Edit: Copied over from Bourbon Cheesecake thread - this is @detroitdad 's son's recipe.

Ingredients
Crust
12 sleeves of Graham crackers (crushed)
6 tbs butter (melted)
5 tbs sugar

Filling

2lbs cream cheese. If blocks then room temp and softened or simply get whipped easier to mix.
1 cup of sugar
1.5 tsp ginger
1/4th cup bourbon
Lime juice. I used in the ball park of 6-8 tbs.
2 eggs

Topping

16oz sour cream
1/2 cup powdered sugar
Approx. 1 - 2 tbs. Bourbon

Method
  1. Preheat oven to 350 degrees Fahrenheit
  2. Toss ingredients together for crust, press into greased spring form pan (I used 10in), then freeze for about 20 minutes, then bake for 15 minutes.
  3. Toss all ingredients together except for eggs. Mix in eggs slowly. Pour into pan, bake for 40-45 minutes. I think I did 45.
  4. Toss ingredients together for topping. After cheesecake is baked pour topping on it. Then bake a few more minutes.
  5. Let cool, and rest over night.
