Burgers, What Are Your Favorites?

Two mentions of brisket in this thread! Now, my understanding of brisket is that its a long slow cook type of meat - so we are simply talking of ground raw brisket in the burger?
Definitely brisket is the way to go. When I make burgers (which is pretty rarely) I use a mix of chuck and either brisket or skirt, all ground up together using a mincer attachment on a Kenwood Chef. I wish I could lay my hands on the recipe but I do remember it contains Marmite, English mustard and horseradish, so a huge umami kick! Steak burgers I avoid - why grind up a perfectly good piece of steak? Besides, a good burger needs to be at least 20% fat which you wouldn't get with steak alone.
