Recipe Classic Philippine Noodles & Veggies ..

One of my work mates, who has lived in Spain for 35 years, and is Philippine had given me her amazingly fabulous récipe for this dish ..

Classic Philippine Noodles & Veggies ..

1 onion minced or small shallot
1 stalk of minced celery
1 large carrot
1/2 kilo of Fresh prawns ( or chicken if you prefer or porc or just veggies of choice)
1 tiny courgette or zucchini sliced into tiny strips
1 tiny Canary Island Avocado or Green Melon if you prefer
8 Green beans or snow pea pods
floretes of broccoli if you wish
Bambu (bio) sprouts - 1 handful
6 to 8 mushrooms if you wish
3 Tablesp. Spanish Tarragona Evoo Bio Natural
1 red chili dried ( 1 inch ) crumbed ( called guindillas )
3/4 cup of stock ( I used vegetable stock ) however, you can use chicken or fish stock or even veal stock if you prefer ..
1 tsp of Bio Japanese Soy Sauce
Philippine Fideo Noodles or Asian Noodles of choice, wheat or rice ..
Green Melon or Avocado ( I used Green Melon grown in Castilla La Mancha called Melón de Sapo, which translates to Frog Skin Melon ) ..

I used a bit of grated finely fresh ginger root as well .. And a drizzle of lemon ..

1) Pella all veggies and remove what is necessary ..
2) Heat the Evoo in a Wok or similar cooking vessel .. Can be done in a Pallera as well ..
3) Stir fry or sauté all the veggies for 5 minutes until slightly tender but crisp ..
4) Add the broth, soy sauce, and cook on low médium simmer ..
5) Salt and pepper to taste .. Add the noodles .. One can boil until al dente and then add to the Wok at the end, toss and add your prawns ..
6) Add the prawns last with the guindilla ..
If Using Chicken, or Meats, add to the broth and cook separately until almost tender, drain and add to the Wok ..

If one can, add Pak Choi or known as Bok Choi ..
