Club sandwiches, fillings please?

A BLT (bacon, lettuce, tomato) with mayo is the most popular here.

For vegetarian, grilled eggplant, tomato, basil, and bufala mozzarella drizzled with reduced balsamic vinegar is good.

Or avocado, tomato, onion, microgreens, and bean sprouts.

Or grilled, marinated portabella, lettuce, tomato, and garlic mayo.

These vegetarian options sounds ridiculously good  I would also suggest eggplant + zucchini + red bell pepper + halloumi + balsamic vinegar :woot:

Sounds like a good combination. How would you cook the eggplant (aubergine)?

Drizzle a bit of olive oil over the vegetables and season, then sauté in a pan. I've had it in a sandwich and it's such a good combination. I guess you'd have to be a bit creative to make it work in a club sammie

A BLT gets my vote every time

So I went with either chicken (poached) with plum sauce. ( homemade) iceberg lettuce tomato mayo and mashed egg combined with curry powder and mayo. This gives a nice moist filling.
Then thinly sliced ham and mustard. Lettuce tomato etc.
got great comments especially the egg mixture.
I also cooked a hot glazed ham for the group as well. Fwiw the glaze was about 250ml of bourbon, maple syrup and apricot sauce, with small jar of honey grain mustard. It's my go to glaze .
I got a 10/10.
Didn't do it to make money but I made a couple of hundy.
