Recipe Coffee Spice Rub for Meats

This simple recipe to season your rib eye, roasts and / or steaks was published in an old edition of a New York City Magazine called Bon Appetit ..

Ingredients:
1 tablsp of Smoked La Vera, Extremadura Pimentón
1 1 / 2 tsps of freshly ground black pepper
1 / 12 tsps of either coriander or parsely ( dried )
1 1/2 tsps of mustard seeds grinded into a powder
1 / 2 tsp. of a crumbled Cayenne red dried chili pepper ( guindilla ) or red pepper flakes if you wish
1 tblsp salt of choice
2 Tablesps. Light Evoo
2 Full tablesp of freshly ground coffee

1) Combine all the spices in a bowl and let combine overnight covered ..
2) Take your meat and rub Evoo on the exterior on all sides. ( This shall serve as a "glue" for the spice rub)
3) Take a pair of dish washing gloves and dip the steak into the spices and rub in with your fingers.
4) Prepare your meat ..
 
Very interesting. I'm on a 'coffee in savoury' food trip at the moment.

I'll just get my naked paws into that mix! I will give this a go. Not sure about dried parsley or coriander (neither survive drying very well). I'd sub dried oregano.
