Collard Rolls

I'm sure most folks are familiar with cabbage rolls, stuffed with a mince/rice mixture and cooked in a thin tomato sauce. We had a bumper crop of collards one year and got tired of the usual recipes. I got to thinking, why not do a Cajun or Creole spin on cabbage rolls using collards. We made rolls using collards as the wrapper, jambalaya as the stuffing and a spicy Creole tomato sauce to cook them in. We've since made them with dirty rice for stuffing.
 
I always forget about cabbage rolls! I don't know why because they are not only economical but can be made vegan (son is vegan). Then someone posts something about them and I get the urge to make them! I think there are many possibly unexplored ideas for fillings for cabbage rolls and I'm liking the Cajun spin. Now I'm thinking, how about an Indian spin?
