Diabetic Grilling Ideas?

If you are a diabetic then chances are that you have a pretty strict diet that you need to follow. I was wondering if any of your diabetic friendly recipes have translated over to the grill and outdoor cooking in your own life. It would be helpful to many to fill this thread with diabetic safe outdoor cooking recipes for the next cookout, camp out, tailgate party, or family picnic.
 
I am not diabetic but I do not like to use sugar. A lot of BBQ sauces and other meat sauces have a lot of sugar in them, so I just don't buy them. I make my own meat sauces most of the time, so I am in control of how much, if any sugar is in them. One thing you can do is make a spiced soy sauce, kind of like taking the ingredients of a teriyaki sauce but omitting the sugar. It doesn't have that sweet glaze, but you still get all the wonderful spice flavors.
 
My niece who was discovered to be diabetic since age 15 (she is now 23) is fond of broiled or grilled food particularly the fish cooked in foil. She said that one good dish for her is the broiled fish since it has no fats to speak of. Sometimes when I would visit them, they would cook grilled chicken in the barbecue pit. It is the drumstick part over the charcoal that would emit a tasty aroma. By the way, my niece would often eat barbecue with no rice but vegetable salad instead.
 
Very Late to this thread but thought I would post some recipes for anyone interested since hubs is diabetic it has been a challenge but a fun one. I have gotten the opportunity to realize I really don't need or crave the carbs I was raised on. Anyway. We/I love to grill! so here we go!

Citrus and herbe marinade is GREAT on zucchini, yellow squash, onions, tomatoes, and Portobellos!
