This is an original recipe of my sister-in-law which I had tasted only once.

Ingredients: 4 pieces of eggplant, spring roll wrapper, 2 tablespoon of crushed peanuts, 2 tablespoon of crushed cashew, 1 piece of green bell pepper, salt, herb of your choice for added flavor only

Procedure: slice the eggplant and remove the skin. Spread a wrapper and place the eggplant topped by peanuts and cashew plus a sprinkling of salt and thin strips of bell pepper. Add the herb if you desire. Roll and fold the wrapper before frying in ordinary cooking oil. Harvest when the wrapper turns brown.

Best served with beer or soda.

Corzhens, is this it? This one is with spicy tomato sauce. Looks pretty. I love pretty. This would have made a great competition entry.
