Orange and dark chocolate is a classic combination that I never get bored of.
For these Five-Layered Chocolate Cups I wanted to go one step further than just sprinkling some orange peel on top of the chocolate. The result is a creamy, refreshing dessert.

Serves: 4 | Preparation time: 20 mins + 1 h to refrigerate

  • Dark chocolate: 250 g
  • Ricotta: 170 g
  • Soy milk: 120 ml
  • Water: 120 ml
  • Oranges: 1, medium sized
  • Digestives: about 8 biscuits
  • Cane sugar: 2 tbsp
Method

Grate the orange’s rind and set it aside. Cut half of the orange in 8 thin slices and press the other half. Set aside both the slices and the juice, as well.

Break the chocolate in small pieces and put it in a saucepan on very low heat, along with the water. Add the orange juice and about a third of the orange peel. Stir thoroughly until the chocolate has completely melted, then turn off the heat.

Mix the cheese, the sugar and the soy milk in a bowl, whisking them to get a uniform, silky cream.

In a separate bowl mix half of the cream with half of the melted chocolate.

Break the buiscuits in small pieces and use about half of the crumbs to create a first layer at the bottom of each glass.

Take a third of the melted chocolate and pour it in each glass to create the second layer.

Use what is left of the cream to make the third layer and cover it with the leftover biscuit crumbs.

Lay a thin slice of orange in each glass to create the fourth layer.

For the fifth and last layer, pour the cream and chocolate mixture in each glass and top it with some orange peel and a pinch of cinnamon powder.

Refrigerate for at least 1 hour before serving.

Tip: This dessert is the ideal conclusion to an elegant and classy dinner. It looks stunning, but most especially can be prepared several hours in advance and therefore does not take away precious time at the very last minute.
