Going Vegan

I came back from a short break a few days ago to discover that my youngest son (age 27) who lives here has decided to become vegan. My youngest daughter (29) who also lives here is a pescatarian - that is, she is vegetarian but eats fish. She also eats eggs and dairy. My partner will eat most things as will I.

Now, as some of you will know, my main interest is in cooking and recipe development (and food photography). I really don't want to become a specialist vegan cook - I cook vegetarian about three to four times a week and sometimes these recipe 'happen' to be vegan. But the idea of cooking without eggs and dairy all the time I'm finding too limiting and frankly a bit depressing.

I don't eat much at all and I don't tend to eat the meat dishes I cook. Until now, my son and partner have eaten those and my daughter has an alternative version. Now it is hardly worth me buying and cooking meat - since my partner will be the only one who eats it!

I expect it I will find a way around this - but at the moment I'm finding it hard to adapt.

I suspect that we don't actually have any active vegan members. @SatNavSaysStraightOn is veggan so eggs are included. If only my son would include eggs!

So - how would you feel about the prospect of cooking vegan everyday?
 
You really want my opinion.
They are grown, they can dang well cook for themselves.
Or in other words, I would cook what I like for my partner and myself and let the adult children fend for themselves.
 
Well in reality, my two sons are married and both have 1 son each.

My husband and I are not Vegans however, we are both veered toward a Pescatarian diet .. We eat beef, venison, chicken and duckling but not frequently.

If, my sons were single adults, and living @ home:

I would tell them, the same thing in different words, what Cinisajoy would say to her kids !

This is not a restaurant ! You are both grown men, and able to cook for yourselves and you are also both able to walk and go to the market and buy what you wish ..

Simple !

I love my shellfish, seafood and fish too much .. I would not consider a Vegan diet without dairy and eggs or a Macro-biodtic diet as an alternative to a healthy Mediterranean diet ..

There are many vegetarian dishes that I am very fond of .. For example: Spinach lasagna, Pasta, Rices, Falafel, Vegetables of course, Lentils, Northern Navy White beans (alubias blancas), chick peas, Couscous, quiche, etcetra. But not as a daily diet ..

@Francesca, actually my most common statement to my 27 year old every time she mentions needing money is you are an adult, get a job. When she whines about something, you are an adult, get a job.
When she complains about dad, you are an adult, quit living off daddy and get a job.
She hasn't called me in a while.
You cannot complain to me about dad's girlfriend, if you don't like it, you are an adult get a job and move out.
Anyone see a theme there.
*On my previous post, I am assuming @morning glory's kids are both normally functioning adults.

Not possible. Well technically possible but it means he would take over the one bit of space which is 'mine' and which as far as I'm concerned is my 'studio'. Its a small kitchen. There is no room for two or three to be in there at once. He would be cooking when I want to cook. Plus he leaves a dreadful mess which I end up clearing up. He doesn't regard it as a mess.

Secondly, I eat very little and don't share meals with my partner. So the problem is, that I'd be cooking meat for one. I guess I'll just have to buy smaller portions and/or freeze things more.
 
I'm not asking for advice particularly - I was just wondering how others would feel about cooking vegan.
If my sister-in-law from a previous marriage was visiting, I would for her. Or just let her take over the kitchen. Otherwise, I see no need in it.
 
Oh and on diets, hubby called a few minutes ago, needing low cholesterol ideas for someone else.
 
Honestly once I was vegetarian for only a week, to test myself and see if I could continue ... but it's not for me. My brother has been vegetarian for ten years, no meat, no fish or milk or eggs.
If I had trouble for only a week being vegetarians, I would not imagine as vegan.
Even though I eat meat and fish, and their derivatives, anyway I try to eat a bit of everything without ever exceeding. I do not often eat meat but I eat it, because I like it and I'm very greedy of all.

In which case, he is vegan, I believe.

In the UK vegetarian means not eating animals. Dairy products and eggs are are OK. Vegan means not eating animals or anything produced by an animal - so eggs, milk and honey are not allowed.
