I bake a lot of bread at home. Recently I've been using caraway seeds (kümmel) and buckwheat flour (buchweizenmehl) in my loaves.

Can you please tell me if this would resemble a German loaf?

Great that you bake a lot yourself!
It is not in most breads, but there are varieties in which caraway is used.
In Germany, we also have many varieties of bread.
