Recipe Hot Bacon Loaf

Ingredients
12 oz minced bacon
1 onion
2 oz bread crumbs
1 egg
1/4 pt bacon stock
mixed herbs
grated nutmeg
pepper
golden breadcrumbs.
butter.

Method
Line a 1lb loaf tin with butter and golden breadcrumbs.
Mix all the other ingredients together.
Spoon into the prepared loaf tin.
Cover with foil and bake for 1 hour.

There is nothing as good as meatloaf to hit a certain hungry spot. I like the simplicity of this recipe. What type of bacon do you use for this?


I would have to guess that it's low-sodium, because regular is so bloody wicked salty. :headshake:

I used some cheapo bacon chops from the co op. They are ok for mincing but if I want a 'proper' bacon chop like in the Somerset Bacon I do I go to the butcher and get some nice thick ones cut.
 
Getting hold of different bacon cuts/joints can be difficult. some time ago I spotted a forehock of bacon in The Alliance, a local supermarket so grabbed it as I knew I had a recipe for it. I made Kentish Bacon Roly Poly.
