Italian meatloaf

I make an Italian (Naples) ground beef / ground veal Meatloaf from time to time ..

I love it the next day, for a "hero" sándwich on Italian style, on Chapata bread with a drizzle of fresh home made tomato sauce !!

My recipe is very simple:

2 / 3 cups day old grated Chapata bread
1 kilo of ground beef
1 large egg lightly beaten
1 tsp salt
2 small shallots or 1 médium size onion minced
2 cloves of minced garlic
1 / 4 tsp of freshly ground black pepper
1 / 4 cup of seasoned bread crumbs with oregano, thyme, basil, Rosemary & savory or majoram ( even amounts of each )
Home made fresh Marinara
An instant read thermometer ( we like our´s medium rare with a crusty exterior top )
Italian Evoo: grease the earthenware or glass casserole you are baking in ..
I also add 1 tablesp of Evoo in the meat mixture to keep moisture in ..

Bake until thermometer reads: 155 F degrees / 350 F degrees in oven ( approx. 55 to 60 minutes

Serve with a starter: Green salad, or polenta or potatoes of choice or a linguini or pasta of choice or broccoli or French Green Beans ..
And rustic Chapata hot from oven .. with a drizzle of Evoo and herbs of choice .. or garlic bread ..
