Recipe Lime and Basil Sorbet

Ingredients
[Use either imperial or metric measures throughout.]
The zest of 5 -6 limes
5 fluid oz (150ml) freshly squeazed lime juice
5 fluid oz (150ml) water
5 oz (150g) sugar
[Or measure the volume of lime juice and use equal quantities of water and sugar.]
A large bunch of basil

Method
Put the water, sugar and lime zest in a pan, bring to a boil, and simmer for 4 minutes.
Remove from the heat, and allow to cool.
Pound the basil to a puree and stir it into the syrup with the lime juice.
Leave to infuse for a while then pass it through a coarse sieve.
Pour into a freezerproof dish and freeze for about 2 hours until set, stir it around every 30 minutes.
Serve it in a glass on its own.

It might be because I copied and pasted the pictures in rather than using the upload pictures button. - I have only recently discovered that I can do that!

I will repost the pictures next time I'm on the pc.
