Looking for roast parsnip ideas.

Firstly, I'd like to point out I'm not some uber cook. So bare that in mind when you post your suggestions lol :')
Basically, I recently rediscovered roast parsnip. I used to hate em growing up, but now I can't get enough of em. I may have on the odd occassion made a bowl of just roast parsnips on their own and happily scoffed em down. But here's my question... Can anyone think of some sort of dish that uses roast parsnips as its main feature. Usually parsnips seem to be a side act on sunday dinners, or in stews etc... But I want to discover something that has parsnip as the "main act", as opposed to being something on the side. That way I can enjoy a hearty roast parsnip meal, without feeling like some uncivilised animal by eating a plate of roast parsnip lol :')
 
Hi @Reverant_Spark. Welcome to CookingBites. I'm a parsnip lover and I like the sentiment of your post - they shouldn't just be served on the side! The thing is, they don't necessarily need to be roasted to taste good or take centre stage.

Have you ever made parsnip soup? It works fantastically well with curry spices.

I also use parsnips in a vegetable bake - this can be a main course. I'll post a recipe if you want to know more.

I luv parsnips!

Usually roast them @ ~400F (204C) tossed in a splash of olive oil, with a bit of coarse/seasoned salt & pepper, in a well seasoned old roasting pan
Perhaps do the same with some carrot chunks, a couple of quartered potatoes, perhaps a couple of whole mushrooms
..and if you want meat..add chunks of seasoned ..whatever..
Just watch it, and turn.and toss (with oven gloves)... as everything browns..should take ~45 mins to an hour.

Would be great with a hearty beer or wine..:)
 
Whilst this dish isn't dominated by parsnips, you can alter the proportion of veg used and parsnip really is a necessary ingredient in it. Hummm, can't currently find it... I'll edit the post when I do.
