As per @morning glory request. Simple recipe for these, but happy they worked as it was my first attempt making them. In Australia, there was also a commercial version of these called Violet Crumbles.
Mix together 1 cup caster sugar, 3 tbsp golden syrup, and 1/3 cup of water in a pot and bring to a simmer. Once simmering, stop stirring but shake pot around now and then and bring up to crack temperature (150 c, 300 f). Add 2 tsp bicarb soda and gently stir mix up as mixture foams up. Quickly pour in to prepared metal tray lined with greased baking paper. I had formed my paper in to a long rectangle shape (see video).
Let honeycomb cool completely, then cut in to desired shapes and coat with melted chocolate of choice and place on greased tray. I used dark chocolate, then topped with a little sea salt. Refrigerate till chocolate sets.
