National French Toast Day

I make this occasionally for the wife, she loves it, I don't. She likes it with whole meal bread dipped in egg with cinnamon as well, then fried in butter.
The croissant thing with egg, I make a dessert with croissant and brûlée mixture, it's very decadent.

Strata comes to mind. Similar to a French Toast Casserole and baked using pretty much any breakfast ingredients you like, like French or Italian bread, spinach, gruyere cheese. Add cooked sausage if you like. I made a Caprese strata with torn bread, shredded mozzarella cheese, tomatoes. Kind of like pizza for breakfast.

A different take/twist on French Toast.
Instead of dipping the bread in beaten eggs, add the eggs (and vegetables) to hollowed out baguettes.

Me too. I was thinking the egg boats could be filled with vegetables like broccoli florets, sliced mushrooms, chopped onions or chives, and shredded cheese of choice - instead of ham or crumbled sausage.
