New to making bread

I have one to mix and knead the dough because my arthritis means I cannot always manage to do it properly. I also use it to prove the dough because my kitchen faces north and can get really cold. I NEVER use it to cook the dough because I don't think the cooked bread ever tastes right, and I always pop the dough in the oven to cook.
I do the same thing. I prefer it baked in the oven.
 
I had a mad moment yesterday and decided to make some all white bread instead of the usual wholemeal. I always make two small loaves so that I can put one in the freezer. Two small loaves need less electricity to bake too, which can't be a bad thing :D

I thought I'd better take a photo of them while there is still something to take a photo of, so here they are. Lovely and crusty on the outside but not a hard crust, and lovely and soft on the inside. I replaced some of the liquid with a large egg and about 1/3 whey.
