Olive oil cake

Has anybody made one? I've seen many recipes but have been hesitant about making one because I just can't wrap my head around using olive oil for a cake.
 
I've always used butter, especially for pound cakes. Love that delicious buttery flavor!!!! :wink:

Just kidding. I'll ask my sis, the baker. I vaguely remember her or her mil making one.

Hi @medtran49, I can perfectly understand your hesitation, I was hesitant as well. A cake or butter-free biscuits sounds very odd, even if I had a pleasant surprise. Of course, butter is essential and I like it very much in desserts, but this can become a nice alternative. Good luck!
 
My only thoughts here are about what kind of olive oil to use. Extra Virgin can be very strong tasting - in mayo, for example some EVOOs are overpowering unless mixed with a neutral oil.
 
I made one today! I sort of improvised. Apparently olive oil cake keeps very well. Photo to follow.

It looks good, kind of like a pound cake. How does it taste?

Its nice. I put juice and zest of orange in it. Its OK. I can tell you the recipe but I'm not claiming any fame here - I think @MypinchofItaly might be more of an authority when it comes to olive oil cake! I used a good EVOO but I can't claim to taste it. There is supposed to be a fruitiness from using a good olive oil.
