Yes I've made many .mostly a chocolate one ,but I've used olive oil to in place of butter or marg many times. It makes for a very moist cake . Some of the better ones I've uploaded a recipe for here .

These are a Greek biscuit made at Christmas time. They are very, very nice and olive oil based, traditionally called Melomakarona or Greek Honey cookies.
