@Yorky, do you leave the batter to stand?

Yes. In the fridge for at least 30 minutes. Covered with a plate or clingfilm.

Interesting. I'll try this for breakfast. Our usual recipe is gf flour, egg and non-dairy milk. My father in law makes pancakes by simply mixing egg with mashed banana.
 
We were given a few limes yesterday just in time for Pancake Day.

When we were kids our mum would make loads which we sprinkled with sugar and lemon juice, nothing else needed.

We don't bother because at the end of the working day we just want to eat a proper meal.
 
Not normally. Eggs are more for Yorkshire puddings, IMO.

After preparing the batter today, my wife assures me that we do add an egg. Sorry, I was wrong. (It has been 12 months!).

I'm away from home at the moment staying with my friend - its quite difficult to take decent photos here as the house is very dark. Quaint but dark. I may have to resort to taking food into the upstairs bathroom to photograph as it seems to be the only place there is any light!
 
We invited fiends round and had a whole selection of toppings/fillings to the table. Between us we had:
Sugar and lemon
Strawberries, blueberries and cream
Chocolate sauce and banana
Peanut butter and banana
Golden syrup (I've introduced two people to the downward spiral of a golden syrup addicton).
The honey, butter and apple were left untouched.
