Pancake Day

I'm surprised at putting sugar in them - especially if you are adding sugar afterwards. To me, the nice part is the lack of sweet pancake contrasted with lemon and a little sugar crunch. In my case very little!

The original recipe I have for whey pancakes tells you to add "1 to 2 tablespoons sugar, honey, or maple syrup". I always assumed that it was because it's an American recipe, and I leave it out. It's far easier to put whatever you want in it or on it then :D
 
I have made drop scones. But not with whey obviously. First I have to make the whey though. :)
Ironically, I have plenty in my fridge! My 'girls' (aka chickens) love home-made cottage cheese! And lacto-fermentation is something I'm looking into as a preservation technique. Curiously it doesn't involve dairy, just the bacteria that are typically associated with digestions dairy sugars, so I hang onto the latest batch for when I get my act together!
