Recipe Peanut Drops or Peanut Cake

If you are a Coconut Drops lover, then you would enjoy Peanut Drops. This is another one of Jamaica's favorite sweet tooth pastry which is made by three (3) simple ingredients.

Ingredients

• 2 cup roasted peanuts
• 3 cups Brown Sugar
• 5 tablespoons shredded ginger
• 1 cup water

Method

• Add Sugar and Water into a deep pot
• Set to boil on high flame
• Add Peanut and Ginger
• Stir mixture consistently with a large spoon to avoid it from sticking at the bottom of the pot
• Let the mixture boils for about 20-30mins or until it is caramel and sticky
• Set greased paper aside to put mixture on (place on a flat surface)
• Use spoon to scoop out mixture in small to medium heaps onto greased paper
• Set aside to cool for about 15-20mins (for it to harden)
