Pesto using pistachios instead of pine nuts.
3 cups lightly-packed fresh basil leaves
1/2 cup freshly grated Parmigiano Reggiano
1/3 cup shelled pistachios
3 cloves garlic
Zest of one lemon
1 teaspoon sea salt
1/2 teaspoon freshly-cracked black pepper
1/2 cup EVOO
Put all the dry ingredients into a food processor (the mortar and pestle in my photo is just for looks). Pulse the food processor until everything is finely chopped. With eht food processor running, slowly ad the EVOO and keep running until nice and smooth.
