Pork Goulash

  • 300 gm Pork loin or fillet cut into 20 mm cubes and seasoned
  • 1 tblsp Olive oil
  • 1 Onion, roughly chopped
  • 3 Garlic cloves, crushed
  • 200 ml Beef or pork stock
  • 1 tsp Chili powder
  • 1 tblsp Paprika
  • 200 gm Tomatoes, peeled and chopped
  • ½ tblsp Tomato puree
  • 1 Carrot, sliced
  • 1 Bay leaf
  • Salt and black pepper
Heat the oil in a wok with a tight fitting lid and stir fry the pork until brown all over. Add the onion and garlic and stir fry until the onion is golden.

Add the stock, chili powder, paprika, tomatoes, tomato puree, carrot and bay leaf and stir well whilst bringing to the boil. Add the salt and pepper, turn the heat to low and simmer for 45 minutes or until the pork is cooked.
