Recipe Sate Dip & Celery Wedges

Sate Dip with Celery Wedges.jpg

What you'll need:

2 celery hearts, rinsed
50g/2oz desiccated coconut
240ml/8fl oz hot water
5 tbsp crunchy peanut butter
1 tbsp light soy sauce
1 small clove garlic, crushed
1-2 fresh green chillies, seeded and finely chopped
1 tsp brown sugar
1 tbsp lime juice

What to do:
  1. Put the coconut into a bowl, pour over hot water and leave to soak for 15 minutes.
  2. Strain the mixture into a saucepan, pressing well to extract all the liquid. Discard the coconut.
  3. Add the remaining ingredients and stir over a low heat until well blended.
  4. Cut the celery lengthways into quarters.

200cals, 17g fat, 9g saturated fat, 5g protein, 5g carbohydrate, 3g fibre, 0.9g salt
