Recipe Savory Sweet Potato Casserole

Sweet potato casserole has always been a part of our family Holiday Dinner. The traditional recipe uses huge amounts of sugar and marshmallows on top. It is so sweet it should be classified as a desert.

Middle sister is hostess for Thanks Giving. Last year I told her I would bring the Sweet Potato casserole. It was a HUGE hit. I was blitzed with phone calls, text messages and emails requesting the recipe and asking me to bring it for Christmas dinner.

This is now our new tradition.

So - a recipe for Savory Sweet Potato Casserole

Heat oven to 350 degrees F

Casserole

Ingredients:

2 1/2 - 3 lbs. peeled, uniformly cubed sweet potatoes (yams)
Salt
2 tbsp. softened butter
2 large eggs
1/4 cup pure Maple Syrup
1/4 cup Buttermilk
1/3 cup whole milk
2 tsp. pure Vanilla extract
Pinch Allspice
!/2 tsp. Cayenne

Method:
Put potatoes in a stock pot and add enough water to cover
Salt - LOTS - the water should taste salty
Bring to a boil and cook until potatoes are fork tender
While potatoes are cooking -
In a large bowl whisk together eggs, Maple Syrup, Buttermilk, Milk, Vanilla, Allspice and Cayenne
When potatoes are tender turn off the heat
Drain well
Return to the pot
Add butter
Mash with a fork or potato masher (please no mixer, blender or food processor)
Add the hot potatoes to the egg mixture 2 tbsp. at a time stirring until eggs are tempered. Add remaining potatoes.
When potatoes and egg mixture are well combined - taste.
Add salt if needed
Add cayenne if needed. The cayenne should be present but in the background - not in your face.
Transfer mixture to a buttered 2 quart casserole.

Topping:

Ingredients:

1/2 cup - chopped, shelled, salt roasted Pistachios
!/2 cup dark brown sugar - lightly packed
1/3 cup all purpose flour
1/4 cup melted butter
1/4 tsp. vanilla
pinch cayenne

Method:
In a large bowl combine all ingredients.
Use your fingers to crumble topping over the casserole.
Gently press the topping with the back of a fork
*Bake for 25 - 30 minutes until crust is golden and potatoes are set
For a browner topping set the oven to broil fro the last 5 minutes
Allow to rest for 10 minutes

*At this point I put my casseroles in the freezer.
