The great thing about muffins is that you can put whatever you like in them. The image below shows today's batch featuring strawberries and chocolate chips. You can use whatever you have on hand or whatever suits your fancy.

Ingredients

3 cups AP flour
1 cup granulated sugar
1 tbsp baking powder
1/4 tsp salt
2 eggs
1 cup milk
4 capfuls vanilla extract
Your choice of nuts, fruit, candy or whatever you prefer

Instructions

Preheat Oven to 400 F.
Whisk together the flour, sugar, baking powder, and salt in a large bowl
Add the remaining ingredients and mix them by hand. Too much mixing can develop too much gluten and toughen the dough. Stop when the flour is incorporated into the mix.
Divide the dough between the baking pan forms. Bake for about 20 minutes if you use a muffin pan as I used for the muffin pictured above or perhaps a bit less if you use a cupcake pan. You can check using a toothpick or cake tester. Serve buttered and warmed in the microwave.
