Recipe Spanakorizo me Piperies (Spinach with Rice and Peppers)

Serves: 4
Cooking time: 15-20 minutes

Ingredients:

1 kg spinach, stalks removed
2 leeks, white and green parts
2 red peppers
2 medium onions
8 cloves garlic, peeled and finely chopped
300 g rice, rinsed and drained
3 tbsp olive oil
Salt and pepper, to taste
Mint, fresh or dried, to taste

Method:
  1. Thoroughly wash the spinach and tear into small pieces. Clean and chop the remaining vegetables.
  2. Heat the olive oil, and add the spinach and chopped vegetables. Cook until the onion is translucent and just starting to brown.
  3. Add the garlic and cook for a further couple of minutes
  4. Add 500 ml water and bring to the boil. Then add the rice and cover. Boil for 2 minutes, then lower the heat and simmer until the rice is tender, adding a little more water if necessary.
  5. When the rice is done, add salt, pepper and mint to taste, then re-cover and turn off the heat. Allow the rice to steam for a couple of minutes, then fork through and serve.
