Recipe Spanish Potato Omelette (Tortilla Española)

I have most likely said this before but I used to virtually live on bocadillo tortillas in Spain in the early 70s.

I use 6 jumbo organic eggs or 8 to 10 large ..

I have used 12 extra large on occasion when preparing for a family lunch ..

It must "set " .. and it takes time to do so ..
