Recipe Spicy Gammon and Turkey Burger

This is so easy to make using cooked spicy gammon (see The Mother Ship Spicy Slow-cooked Gammon). I made a gigantic half pounder (250g) which my partner couldn't finish in one sitting!

Ingredients (per burger)
  • 125g gammon
  • 125g turkey mince
  • 30g Cheddar cheese, grated
  • Red onion (sliced)
  • Coriander leaves
  • Tomato ketchup
  • Oil for frying
Method
  1. Shred the gammon and mix with the turkey. Compact it with your hands until the mixture is firm. Add salt to taste - fry off a small amount to decide how much salt it needs depending on how salty your gammon is.
  2. Shape into a burger!
  3. Fry in oil over a medium heat for at least 8 minutes per side. Turn up the heat towards the end to char the burger.
  4. Pack grated cheese on top of the burger and place in the oven or under a grill (broiler) until the cheese melts.
  5. Serve in a toasted bun with the red onion, coriander leaves and ketchup - or any other toppings you desire.
