What are your favorite salads to make during the summer months? It is starting to get really warm around here and soon there will be days where I do not feel like cooking dinner. I have to admit that I am not very good when it comes to blending my own salads and making dressings, so any ideas would be helpful.
 
I make a few of my own dressings, and different salads too

A Creamy Caesar Dressing
Buttermilk ranch dressing (that's better than hidden valley)
and a creamy Italian

for salads I like just plain lettuce most of the time. but

this is great. you can prep the veggies early and then just mix about 30 minutes or so before serving. YUM!

Unfortunately I am not here to offer any suggestions but more to see what tips I can get myself. I rather love things like potato salad and cole slaw all yeitar round but try to have or the other just once a week. Green salads are also a favourite in our household. I am quite a Hellman's addict but ever since it got a knocking here I've been thinking of making my own mayo and also welcome ideas for a salad dressing from scratch. Thanks for your suggestions @Chef00.

Lets kick that calorie laden mayo... I made a great potato and chive salad last night using thick plain yoghurt mixed with a little Dijon mustard, a little olive oil, garlic and a pinch of salt. It couldn't be easier. I'll make it again and photograph it tomorrow.
1 tbsp of mayo = 95 Kcals
1 tbsp plain yoghurt = 10 Kcals

Thanks. I have been lamenting how to approach the mayo (Hellman's to be specific) addiction. I honestly don't use it often ( hence no real addiction) but whenever I wantma yo for anything it must be Hellmans. Those stats are a bit worrying to be honest. I must try the yogurt.
 
Thanks for the replacement for mayo. I do not use very much mayo except potato salad, it will be good to have a healthier alternative..
 
I like most salads (Caesar salad a definite no-no, though because of the anchovies, or any other salads or dressings involving seafood in some form or another) but prefer ones that are really colourful as a main course. A nice mix of leaves, preferably all shades of green, with tomatoes, onions, peppers, cucumber and a homemade dressing with cheese or cold meat and a couple of slices of bread. Lovely! The dressing could be a plain oil/vinegar dressing, or with chilli, or whatever, depending what I feel like at the time. No creamy dressings or mayo for me, but I have been known to have a little good old-fashioned salad cream sometimes.
 
I love warm salads,have been doing a slow cooked Moroccan lamb using shanks,shredding the meat serving with rocket salad roasted aubergine ,pomegranate seed and cous cous salad,also seared squid rings and chorizo is a favourite
 
I love Caesar's salad and I would have it any time over any other salad. However, it is very tedious and laborious to make. We once had bought a bottle of dressing but I still had to fry bacon and had to make sure I had the croutons. And caesar's salad is best with the romaine lettuce which is not always available here. So what I do now is to just go to my favorite restaurant that serves the best caesar's salad. La Copa beside the Manila International Airport is actually a steak house and we only go there when I wanted a caesar's salad... with steak, of course.
 
I'm not much of a salad person here, I usually prefer a grilled vegetables or have them stir fried. Sometimes though I mix up a dressing of equal parts oil and acid (lemon juice or vinegar) then add 1 part honey, along with salt and pepper to taste. Other times I add garlic, chili's etc. Then I just toss in my favorite in season vegetables. This is usually as a side meal with whatever I else I have going on. We were never raised much on salads unfortunately.
 
I like to make a pasta salad and put my own additives in there to make it a complete dinner. I will put odds and ends of veggies and meats in the salad to make it more like a complete meal. My friend who used to live here said once "Your salads are always good." Anyway, I saw a recipe for a Hawaiian Tortellini salad that looked really tropical, fruity, filing and awesome. I think I am going to try that sometime.

I think your idea of kicking the mayo with yogurt is a great idea. I have seen that other places. Even if you just subsituted some of it, it would be an improvement in the calorie count, and adds nutitive value as well. I think next time I make a mayo type salad I will sub the yogurt..I bet I won.t miss it. I have had some salads with yogurt and liked them.

I was out of yogurt and after seeing what @morning glory recommended I picked up a couple at my local mini mart last evening. I thought it would be good to have some just in case. I find yogurt is being recommended as a replacement even in baking.
 
I have tried this mayo recipe it's very close to Hellman's. I have a problem using raw egg (personal thing) but if you don't this is good. I got this from alrecipes I don't remember the name of the actual recipe since I renamed it and don't remember the woman's name that published it. but it is not mine.
Not Quite Hellmann's
Amount About 1 ¼ cups

Ingredients

1 egg (at room temp)
1 teaspoon dry mustard
1 teaspoon salt
1 ¼ cup oil (corn, vegetable, or canola)
1 dash cayenne pepper
3 tablespoons lemon juice or vinegar


Directions:

1. Place egg, mustard, salt, cayenne pepper and 1/4 c. oil in blender and blend on low.


2. While the machine is blending, SLOWLY pour in another 1/2 c. oil. You may have to stop and scrape down the mayo. Add the lemon juice/vinegar and the remaining 1/2 c. oil. Blend until well combined.


3. Store in refrigerator, tightly covered.


If you want an egg white mayo this one seems to be very popular. also from all recipes
