Recipe Sweet and Savory Sweet Potato (yam) Fries

I made this as a side for dinner last night. Smart phone is still being stupid so no pics. I have been playing around with this recipe for sometime and will continue to do so - different spices.

In the south sweet potato and yam are used interchangeably. I am talking about the orange fleshed yam/sweet potato. Call it whatever you want.

One potato the length of my hand is enough for the two of us.

Ingredients
1 sweet potato
3 tbsp. coconut oil or vegetable oil (I have tried it EVOO - not the best)
2 tsp. ground cinnamon
2 tsp. smoked paprika
1/2 tsp. nutmeg
1/2 tsp. cayenne
1 tbsp. Demera sugar + more for dusting
A pinch of turmeric
Sea salt and fresh ground pepper
Taste add more cayenne if you want it really hot. More salt and pepper if needed.

Method
  1. Heat oven to 375 degrees F
  2. Line a rimmed baking sheet with foil
  3. Peel the potato and cut into fries (chips)
  4. In a large bowl whisk the rest of the ingredients together
  5. Add The fries to the bowl and toss until well coated
  6. Arrange on the baking sheet in a single layer. Drizzle with remaining mixture
  7. Sprinkle with at least a tbsp. of Demera sugar - more for a little extra sweetness.
  8. Cook for 10 minutes and then turn the potatoes.
  9. Cook for an additional 5 to 10 minutes - until tender.
  10. Taste and add additional sugar, salt or pepper as required.
Serve hot

I rarely use the same spices in the same quantities. Always room for tweaking.
