Recipe Tandoori chicken with a tomato cucumber and onion salad

Ingredients:
1kg of skinned chicken drumsticks or small thighs
2 Tablespoons of malt vinegar
2 Tablespoons of vegetable oil
1 heaped tablespoon of ginger and garlic paste
1 Teaspoon of coriander 1 teaspoon of cumin 1 teaspoon of garam masala 1 teaspoon of chili powder and half a teaspoon of turmeric
1 Tablespoon of salt

Method

Mix everything up in a casserole dish and cover leave in the fridge for at least 4 hours but overnight is better
Then line a roasting pan with tin foil (this will help with the washing up )put the chicken on it i turned my oven up to the highest setting for 30 minutes but you can give 35 or 40 minutes

Tomato cucumber and onion salad

Finely slice half a white onion half a red onion
make fine matchsticks out of the quarter cucumber.and 1 tomato deseed it and finely slice it up
combine everything in a bowl with 1 tablespoon of olive oil and a tablespoon of ready made mint sauce cover and put in fridge until needed.

Hi it is very easy...if you are going to make the salad with it can i suggest that you only use a teaspoon.... not a tablespoon of mint sauce best of luck :thumbsup:

I made your recipe - it was very good. As you suggested I used a teaspoon of mint sauce. Hubby loved it.
