This is my recipe for a pretty basic chili with beans.

It's called The 33 because it contains 3 kinds of hot chili peppers, and 3 kinds of beans.

The "33" chili

Ingredients

2 lbs top round london broil, 1/2" cubes
Salt, pepper, and garlic powder
6 Tbsps grapeseed oil
1 head of garlic, cloves thinly sliced
2 medium sweet onions, diced same size as the meat and beans
1 red onion, diced same size
2 green bell peppers, diced same size
3 jalapenos, minced
2 large cans of plum tomatoes with puree
2 Tbsps chili powder
1 Tbsp dried basil
1 Tbsp dried oregano
1 Tbsp dried Thyme
1 Tbsp red pepper flakes
1 Tsp toasted and ground cumin
1 Tsp cayenne powder
1 Tsp smoked paprika
1 Tsp sweet paprika
1" cube of fresh ginger, minced
1 can of red kidney beans, rinsed
2 cans of black beans, 1 rinsed, 1 w/ goo
1 can cannelini beans
2 large mangoes, 1/2" cubes

Directions:
  1. Sliced steak into roughly 1/4 to 1/2 inch cubes. Press dry with paper towels and season heavily with s&p and garlic powder.
  2. In a deep, heavy bottomed stainless steel pot over high heat, brown the cubed steak in 3 batches with 2 Tbsps of grapeseed oil each. Make sure the meat gets very well browned.
  3. Set aside browned meat, reduce heat to low and add garlic. When garlic begins to brown, add diced onion. When onion begins to sweat, turn up heat to medium add diced green bell and minced jalapeno peppers. Continue to stir and sweat veggies for a few minutes.
  4. Add dried herbs and spices and the fresh ginger, stir in for a five minutes more, then add cans of tomatoes and their puree.
  5. When the mixture begins to bubble, add the can of black beans with the goo, reduce heat to medium low for a slow simmer. Simmer, stirring occasionally (especially scraping the bottom) for about an hour.
  6. Add the drained cans of beans and cubed mango, and continue to simmer and stir for at least another half hour to an hour, but not so long as the beans begin to disintegrate.
  7. Serve in a bread boule topped with shaved parm or grated white cheddar, or over french fries, on a baked potato, or on a burger.
