The CookingBites Recipe Challenge: Coffee

Hi,
Thanks to all those who took part in this 'Coffee challenge', the recipes are all interesting and some have really amazed me. Congratulations to everyone!
I admit that the choice was not easy, I was very undecided between three recipes that have particularly attracted my attention (and which I definitely want to try, thus thank you for the inspiration):

All you need to do now is choose an ingredient and post it in this thread and we will then set up the new thread. You can see all the ingredients chosen to date here. It doesn't really matter if you choose an ingredient which we have had before so long as it wasn't too recent. You then become judge for the next round. We usually set the deadline for three weeks later.
 
I am honored to be a winner. The next ingredient will be bacon.

The following ingredients qualify.
Bacon, Pancetta, Back bacon, turkey bacon, and vegetarian bacon. (Yes, veggie bacon - Check out this article)

Again, many thanks to CookingBites for selecting my recipe.

I think pork cheek is also included...?

I'm really sorry I missed the deadline @MypinchofItaly - I did have two entries to post, but work got in the way last week. However, I have learned many new uses for coffee!

@epicuric It amazed me, in fact, not to see some of your creations! Well, as you said, you (and me too) have learned many new uses for coffee. Maybe you could share your entries anyway...:whistling:?

Congratulations @TodayInTheKitchen. It was a curious recipe but then coffee was a very challenging ingredient.

Curious and yet so simplistic in design. What I didn't realize when I combined those ingredients was just how much the coffee (and Amaretto) would change the dynamic of Maple Syrup. I have tasted hundreds of variations of Maple Syrup but when I tasted this one, I knew I found a flavor combination that was special.
 
Coffee is a universally loved drink all over the world. It’s, therefore, a shame that most people use instant coffee which can never deliver the same level of taste.
