Recipe The King´s Flamenco Eggs (Huevos a la Flamenca)

Flamenco eggs were eaten by The King of Spain, at one of the Spanish royal residences, in a country estate called La Flamenca.

This recipe was authored by: Spanish Historians, and Authors: Alicia Rios & Lourdes March.

Flamenco Eggs:

1/3 Cup Spanish Evoo.
1 Large Onion or 2 shallots & 1 leek ..
100 Grams of Iberian acorn fed cured (aged ) Ham from Dehuesa or Jabugo.
500 Grams of ripe red tomatoes ( peeled & de-seeded ) and diced finely.
100 grams of French thin Green String Beans ( Cooked just until tender yet crisp )
100 Grams of fresh sweet peas ( you can use tinned / canned or jarred or frozen if you wish )
155 Grams of diced peeled potatoes ( sautéed / fried )
100 Grams of Smoked Paprika Spanish Cured Chorizo ( paprika cured porc sausage )
Freshly ground black pepper ..
salt to taste ..
4 eggs for 2 people ..

1) Pre.heat your oven to 180 degrees C. ( Gas mark 4 )
2) Heat the Evoo in a skillet, or frying pan, and fry the onions gently on low heat.
3) When the onions begin to Golden, add the sliced strips of Iberian ham & sauté for 2 minutes.
4) Now add the tomatoes and let the ingredients reduce ..
5) Once reduced, add the fried potatoes, the cooked Green string beans, the cooked peas and the chorizo.
6) Cook the "sofrito " for a few minutes ..
7) Transfer the Sofrito to an earthenware ..
8) Break the eggs over the sofrito and bake until the eggs are set and then serve immediately with rustic country style bread or a freshly baked Baguette ..

Definitely a wonderful brunch or lunch ..
