Easy, delicious ways to use fresh herbs from your garden.

Compound Butter

Soft herbs work best. I have dill, basil, sage, thyme, oregano and flat leaf parsley.

There is no precision to making compound butter. It is all about personal taste.

I usually make 1 pound at a time.

1 lb. room temperature butter.
1/4 to 1/2 cup minced fresh herbs.

Make individual butter. Basil butter, dill butter, sage butter....

Put the butter in a medium size bowl.
Start by adding 1/4 cup minced herbs.
You can use a rubber spatula to mix or your clean hands.
Taste
If you want a more intense flavor add more minced herbs.

I found some silicon molds at the dollar store. I think they are supposed to be used for candy making.
Use a small rubber spatula to scoop the butter into the molds, press out air bubbles and level the top.

Freeze.

Transfer to a zip bag and keep in the freezer until needed.

I also like fennel and rosemary. Because of the intense flavor start with a small amount of the herb - 1 tbsp. Taste and add more.

Another good butter is sun dried tomatoes. They are usually jarred in oil. Drain, pat dry then mince and add to your butter.

Again to taste.

We have very large family gatherings for Thanksgiving and Christmas. My compound butter is always a treat for my family.

Herb Oil Cubes

Another use for your garden herbs is herbed oil cubes. I use an ice tray. My molds are irregular in shape and shallow. A simple ice tray. is better for this application.

1 tsp. (or more) minced fresh herb in each compartment of the tray.
Fill the rest of each compartment with EVOO.
Freeze.
Transfer from the trays to a zip bag and store in the freezer until needed.

I use dill oil when I make Crispy Skin Salmon.

Sage or rosemary with lamb.

Oregano and thyme in a tomato sauce.

Quick and easy ways to use your garden herbs.

You can get creative with both the butter and oil.

Ginger
Capers
Horse Radish
Garlic
Jalapeno

What ever you like to cook with use it to make compound butter or flavored oil.

You can also try adding a small squeeze of lemon or lime to either the butter or oil.

Play with it. Have fun.

Fabulous ideas .. I am quite a fan of compound butters especially for the Xmas season .. I also have made some flavored Evoo .. Chili pepper and I like Genovese Basil, which I grow on my terrace ..

Your dill Evoo sounds wonderful for salmon, fresh wild or smoked or Gravlax ..
