Recipe Ungarisches Gulasch (Austrian goulash recipe, without tomatoes)

Serves: 4 to 5

Ingredients:

1 1/2 lb (675 g) lean beef
5 onions
1 clove garlic
1 pint (570 ml) stock or thin soup
1 tbsp paprika
a few caraway seeds
salt and pepper
1 oz (25 g) butter

Method:

Cut the meat into 1-inch cubes. Melt the butter in a thick casserole. Slice this onions and cook them in this until they are golden brown. Add the meat cubes, the garlic (crushed), the paprika and the caraway seeds. Season with salt and pepper. Cover the casserole and cook until the meat is slightly browned. Now cover with the soup or stock. Simmer for about 1 1/2 hours. Dumplings can be served with this, but it is usually accompanied by noodles or macaroni.

There are a lot of onions in this recipe (five!) - which is no bad thing. The rest of the recipe is perfectly simple. The caraway is a must for goulash. I'd use more paprika - but it might depend on which kind of paprika you use. I've learned that paprika is not just one type.
