I try to be vegetarian as much as possible, but I generally don't really like regular fish sauce so I was looking for a substitute.
For the "fish" sauce you combine the following ingredients:
Rough chop on all of them, cook for two hours, sieve, then let it simmer until there is roughly 1/3rd left. Done!
For the "fish" sauce you combine the following ingredients:
- 900 ML water
- 300 ML (Korean) soy sauce
- Handful of dried shiitake
- Handful of dried porchini of choice (optional)
- 3 shallots
- Teaspoon of tomato purree
- Teaspoon of your favorite peppercorns (take out at the end)
- 2 Tbl spoon vinegar (I used apple cider)
- 2 Tbl spoon mirin
- 4 pieces of dashima
- 4 cloves of garlic
