@Stevenrules1: I'm really looking forward to your recipes! This is a cuisine that I rarely do simply because I don't have any reliable examples about what good Caribbean cooking is like. The closest I've gotten are just savory recipes using Allspice. I'd be very interested in a Jerk Chicken recipe, which you can enter in the latest cooking challenge:
