Pigs in blankets in the Southern United States are usually wrapped in some kind of pastry/bread dough rather than bacon. I sometimes use a piece of white bread smeared with mustard, then a piece of American cheese, with a cooked hot dog laid from bottom corner to top corner, opposite corners brought up and held together with toothpicks, brushed with melted butter and then toasted under broiler until the bread is nice and toasty and the cheese is melted for a quick lunch or a quickie don't feel like making dinner or getting take-out meal and we happen to have hot dogs in the house.

Our dinner last night was homemade chicken vegetable soup with crispy chicken skin crackling garnish.
Ah, over here they are called sausage rolls! Like these:

Usually made with puff pastry. Home-made are best - as you say, with a smear of mustard inside!
 
One of my favourite breakfasts is queen scallops with crispy bacon. Scallops with black pudding is also quite common, so the scallop/pork combo definitely works!

Yes and I have just found out it, a new taste that works perfectly!
I'm still not sure I can dare a breakfast like that, but black pudding is definitely something I always appreciate since I ate it last year in Edinburgh

You haven't ever tasted my omelettes so don't knock it. :) Coriander works fantastically well with eggs... a little chilli sauce over the top... and chips. It was good.

I've got coriander in the garden, I love it. Never thought of it in an omelette. Ever.
Maybe next time as I love an omelette.
